When I was a little girl and I wanted a quick snack, my mother would pull a teeny cute of “La Vache Qui Rit” cheese out of the refrigerator and give it to me. I remember being a bit fascinated by these individually wrapped cheese cubes. Somehow, with a french name, a silvery wrapper, and a tiny size, I felt like she was giving me something unique and rare.

And these creamy, spreadable cheeses have another secret that we love: four of these spread-ables are only 45 calories each (classic cream is only 55 calories per wedge). The portion controlled size, the portability, the creaminess, and the variety, have the old fashioned brick of cream cheese, amply beat!
But in the long run, it’s the taste that matters. I tried all of these, and they are all as good or better than full fat bricks of cream cheese, and a lot of the flavored cheeses as well. My favorite is the Cinnamon Cream, which really works well on a waffle or pancakes (it will get even softer) and really satisfies the need for sweetness and spice, without making you feel guilty. I have spread these new cheeses on tortillas, even added them to an omelet.

If you think that all you can can do with cream cheese is spread it on a bagel, think again! For example, here is an easy recipe for strawberry stuffed french toast that will wow a crowd, but not pack on the pounds.
Strawberry Stuffed French Toast
- ¼ cups Fat-free Liquid Egg Substitute
- 1 teaspoon Vanilla Extract
- ⅛ teaspoons Salt
- 2 slices Light Bread
- 1 wedge The Laughing Cow Smooth Sensations Cream Cheese Spread Strawberries & Cream 1/3 Less Fat
- ½ cups Sliced Strawberries
- 2 teaspoons Light Whipped Butter Or Light Buttery Spread
- 1 teaspoon Powdered Sugar
In a wide bowl, mix egg substitute, vanilla extract, and salt. Lay bread slices flat and spread with cheese. Top one slice with half of the strawberries followed by the other bread slice, cheese side down. Press lightly to seal. Bring a skillet sprayed with nonstick spray to medium-high heat. Add butter and let it coat the bottom. Meanwhile, coat sandwich on all sides with egg mixture. Cook in the skillet until golden brown, 2 to 3 minutes per side. Serve topped with powdered sugar and remaining strawberries!
Truly, The Laughing Cow has come a long way since the days of simple cheese wedges in one flavor, and those teeny, tiny little cubes of cheese that I used to love (and still do).
